For our Baking Chez Moi recipe with Tuesdays with Dorie, we had a very Thanksgiving-appropriate Cranberry Crackle Tart!
My mom makes a pie for our small Thanksgiving at our house, while I make the rest of the meal, so this dessert was our own pre-Thanksgiving treat that we shared.
I chose the sweet tart dough and realized that my little pastry cutter thing is broken or something because the little wheel wouldn’t roll. So, I used my fingers.
My crust didn’t shrink as much as I thought it would. I might have pressed it too hard into the pie plate…
I used cherry jam for the base because a) my husband bought seeded raspberry jam and I don’t like that and b) I like cherry jam. The latter was the most important.
Thanks to all with the P&Q information as it helped me use my hand mixer for the meringue. However, I got tired and I don’t think I beat it for quite long enough. Everything still turned out okay, except for when I almost burned the thing under the broiler.
The verdict? We all really liked the tart. I loved how each bite was slightly different both taste- and texture-wise. I’d get the interplay between the crisp crust and the fluffy, crispy meringue as well as the smooth jam. The filling provided bites of intense sweet with the meringue and the jam followed by the mouth-puckering tartness of the cranberry just when the sweet was getting to be a bit too much. It’s too bad it doesn’t keep longer because it really is delicious.
Definitely a winner!
