FFWD: Waffles and Cream

I feel like there are 2 kinds of people: pancake people and waffle people.  Sure, you can be both or neither, too.  So, I guess that’s 4 kinds of people, but whatever. The point here, people, is that I definitely fall into the waffle camp.  We made waffles often as kids, freezing the leftovers so we could toast them during the week for breakfast.  For me, breakfast pancakes are often too heavy, or too eggy, and soak up the syrup far too readily.  Waffles have those fun little pockets where the topping concentrates, but it’s easily broken up by the other sections of cooked batter.

 

I made the caramel sauce and half-heartedly made the cream.  I made a 1/2 recipe of the waffles and wanted small dollops of the cream.  Too little cream in my mixer didn’t work out so well.  It tasted good, though!

She cried when she finished.  Well, she did ask for more first, and then when I said it was all gone, she cried.

I was also excited because we threw away our grody old waffle maker a couple months ago.  I decided I wanted a stovetop waffle maker so I could more easily clean the thing and so it wouldn’t take as much room in my cupboards.  It is awesome and created some nice crisp waffles.  Mmmmm….  There’s a learning curve, though, and that’s why my waffles above look a tad funky.

Make ups

Yes, I continued on my odyssey of trying to catch up as much as possible.

I made Tuna Rillettes yesterday and we ate most of it before I could take a photo.  That is a yummy little appetizer right there.

I had no idea what to expect with this dish.  I quick-preserved lemons via some 30-minute method I found on the internet.  I also let the tuna marinate overnight.  We loved the dish: we loved how colorful it is and we loved how it tasted.  My husband said, “this is restaurant quality!”  That was very nice of him to say.  I wouldn’t say it’s restaurant quality, but it was dang good.  I’ll definitely make this again!

Brown Sugar Squash and Brussels Sprouts en Papillote

I don’t really like brussels sprouts and never have.  One day, my dad had said he was making chili verde for dinner and us kids saw a big bag of what appeared to be brussels sprouts on the counter.  The kids went en masse and complained to dad because, hey!  You said we were having Mexican food and none of us like brussels sprouts.  He chuckled and informed us they were tomatillos, so maybe we should’ve looked a little closer.

Anyway, I did eat one version of brussels sprouts with mustard from Smitten Kitchen that my sister asked me to try.  It was good.  This dish?  Even with the other things I like–apples and butternut squash…Nope.  I think I overcooked it, too.   Oh well.

    I can’t believe you made only half the recipe, Katie…I made a second batch and doubled it! There was just not enough batter, the first time, to even fill my waffle maker twice.
    I love that SHE cried for more…lol! They really were good…an enjoyable recipe! I put the leftovers in the freezer, to enjoy them another day!
    Your make up looks delicious…I barely remember it. Wonder if I made it?

    Your poor sweetie! I’m sure you’re happy to know she’ll enjoy them the next time you make them. Your top photo is great. I’m impressed with all the make-ups, too. I do like Brussels Sprouts but didn’t care for this recipe. We did like the Tuna Confit, though!

    I have a stovetop wafflemaker for the same reason as you – space! These were good, and the caramel sauce would have bern lovely. The tuna confit was a good one – glad you made that.

    Great post and nice catch-ups! I used to dislike Brussels sprouts too, but then I married a sprouts-lover and he managed to convert me. He still hasn’t converted me to peas, which are probably my least favorite veggie (and his all-time favorite; he complains that I don’t make him peas often enough).

    My kids were looking for more too. One each wasn’t enough. When Dorie says 4 it’s 4 French servings. I always forget that. Great choices for make ups. I have about half the book to make up so I am too daunted to even try.

    I totally agree with you on the stovepot waffle maker! I have two – one long handled and one short! Great job on your catch-ups, I did not like the brussel-sprouts too!

    Aw, now that’s a very positive review from your sweet girl!!! My least favorite veggie is lima beans, but I’d still eat them if served to me 🙂

    Now, Brussels sprouts are my favorite vegetable – my family used to joke about them disappearing from the table. Actually, it’s still a standing joke. At 41, I still can’t escape it…

    First, showing my ignorance as I have done since becoming a Dorista, what’s a stovetop wafflemaker? And, what’s with the holes? Secondly, I’m with your toddler on this one. Half a recipe. C’mon, Mom, you can do better than that. I will definitely have to beg, borrow, and, I’m not above stealing, a waffle maker to try this recipe. It looks delicious and is getting raves from everyone but there is no more room in my 940 sq. feet condo for anything, even Me, actually. I’m with you, liked Tuna Confit but struck out on the Brussels. I love those little guys but not cooked EnPapillote. As I recall, mine were mushy. Loved your post, Katie, especially that darling second photo.

    I made the wrong recipe, but can’t wait to try this one. Yours looks delicious. I’m having trouble deciding whether I’m a waffle person or a pancake person. I think that means I’m both. I never ate brussels sprouts when I was growing up. My parents made a pact never to cook them because they both hated them (along with liver). I’ll admit that once I tasted them, then became a favorite of mine. My least favorite vegetable is a tough one. I like most of them. I used to be anti-broccoli and cauliflower, but once I discovered roasting, I actually like them now. Wishing you and your family a great holiday weekend, what ever you are celebrating!

    I know it is not right to think it is sweet to consider your adorable little daughter crying, but it did warm my heart to think of this as the best compliment EVER- LOL !! So glad she enjoyed it and is looking forward to more 🙂 Kudos on the make ups. Nana and I have been stockpiling our makeups are are likely going to do one massive post. Yikes do I have a lot more work to do !! (and too funny about the brussels sprouts…I like them but was cringing at the thought of them in Mex)

Welcome!

I teach at a university in the West and I cook. I study French stuff, when I have my research hat on, so I also like French food. I've lived in Paris (in the 6ème) and there, as here, I tend to cook for myself. I actually prefer baking, but there's all those calories, you know. I also like wine a lot. It's important to me to eat good food and drink good wine. That last is the fun part. The work of cooking? It's all about the stress relief. Well, that and trying to procrastinate on grading!
