This is really not a great dish in terms of photography! But it sure was delicious.
Spatchcocking the chicken and weighing it down with a pan, cooking partly on the stove and partly in the oven, worked well for us, though I think the marinade is what also made a juicy, tasty chicken. My husband loved it, the kiddo ate it, and I have also used the leftover chicken on lunch salads. Yum!
In other news, it’s been a busy time: I took a trip to the East Coast for work and met up with one of our fellow bloggers–Betsy from aplatefulofhappiness.com!
Also, it was my birthday yesterday so I’m going to now go do the work I put off. 🙂
