It’s the last day of classes today! I already held mine a few days ago, but still: another milestone gone for so many students since it’s the last day of classes for the entire academic year!
During this past week, I’ve made Fattoush at least 3 times. I’ve eaten for lunch and dinner on various days. Eaten it with roasted chicken breast on top and eaten it by itself. Suffice it to say that I liked it. The first time I made it, I followed directions exactly, mixing the dressing in the bottom of the salad bowl and then adding the ingredients:
It had way too much dressing for my tastes, which is a strange thing for me to say as I love dressing. So, subsequent iterations had me making the dressing separate and adding it to taste.
Next? I want to make this with thinly sliced kale as I’ve got some and I think the kale will do nicely with the dressing and sitting a while.
This was a great salad in my book!
