Okay, so the roasted tomatoes with this dish are fabulous with that deep umami tomato flavor really coming to the fore after roasting with some herbs. Oh my!
For the “cheese” I couldn’t find goat yogurt and I didn’t want to use regular ol’ yogurt, so I bought kefir and used that to approximate more the tanginess of goat milk. Very tasty, even without the tomatoes, and my husband I slathered that stuff on crackers, bread, everything we could find.
