Chocolate chips, dried cherries, and toasted hazelnuts in a yeast bread? I’m in. Every time this recipe has been nominated over the last however many months I hoped it would win, and finally here we are! I never did make the savory fougasse from Around My French Table so this was my very first fougasse foray.
My dough didn’t really get foamy/frothy in the first step, which had me worried, but it all worked out in the end. I’ve also realized since moving some 16 months ago that my current kitchen is much colder than my last one, meaning I have to be more cognizant when making yeast breads. Otherwise, I have to wait a loooooong time for the rise. I cranked up the heat in the house since we’ve been going through a minor cold snap in these parts. My husband complained, but I explained to him, “It’s for dessert!” He seemed mollified.
I took the shortcut of including chocolate chips instead of chopped chocolate. I didn’t miss the chopped chocolate. I really loved how this wasn’t too sweet at all, with bright bursts of dried cherry and the creamy chocolate. Any more sugar in the dough would’ve been too much, for my tastes.
