Phew–just finished baking these for a Saturday morning breakfast and had a moment to post.
Buckwheat madeleines with cacao nibs. Luckily, I have cacao nibs on hand for my holiday-season Chocolate-infused Vodka–I usually infuse the vodka for 6 months with cacao nibs to get a nice, extracted level of flavor. Anyway, these madeleines were quite delicious, though the flavors are a bit unexpected from the “typical” madeleine. Indeed, my husband took a bit to warm up to them. The kiddo, however, who has no expectations for madeleines, deemed them “yummy! You are the best mommy cooker who ever lived!”
They are a bit fussy as Mardi mentioned. I sprayed my madeleine tin with that spray oil/flour mixture you can buy. And I kept overfilling the dang molds, so I ended up with 19 overflowing madeleines. Oh well. They still tasted good.
It was also a nice treat after having an odd morning. We live nearby the west coast space launch facility and we often wander up the block to watch launches, and boy have there been some spectacular ones. Today? Not so much, even though it was exciting in other ways. This morning, Nasa launched their Insight mission to Mars–the first interplanetary launch from the West Coast! Alas, it was foggy so we heard it, but didn’t see anything. Getting up at 3:30 on a Saturday is not fun and the kiddo asked to back to sleep no less than 6 times before the launch began, but at least we were all able to go back to bed for a time.
