Boy, these were something, weren’t they?
Ah, the soufflé, this wonderful creation! I’ve told a version of this before on my blog: my brother has a theory that everyone has a very minor superpower–something they just always get right that tends to be troublesome for others. His is taking selfies. For a long time, I thought mine was soufflés. I had made them several times and didn’t know what all the fuss was about with the falling and what-not. Until one day, I blithely made one for company and it fell for no reason I could discern and there went that supposed superpower (my actual one: I don’t burn things while baking. I’ve over-baked but never burned).
These soufflés probably shouldn’t have worked. I halved the recipe and was gonna somehow approximate 2.5 egg whites. I got flustered with child, cat, and husband hullabaloo and ended up adding all 3 egg whites (no big deal, I figured), but also all 3 egg yolks. The soufflé base was, shall we say, like spackle and had me pretty worried. I’m glad I soldiered on as they turned out really quite perfect and even the kiddo ate it all without even looking askance at the green things.
I’ll definitely make these again since they have pretty much all of my favorite savory things: cheese, bacon, and arugula.
