These are the kinds of weeknight recipes I love–set it and forget it with some resting in a dry rub to give extra flavor. Easy to reheat, too!
This is the second time I’ve made this recipe. The first time, it was fine and we liked it well enough, but I think the beer I chose then didn’t match well with the bbq sauce, etc., that I used. This time, I did 2 things different: first, I didn’t have any beer so I used chicken broth; and second, I cooked it in the crockpot. Both changes worked marvelously! I didn’t notice the lack of beer and after heating the sauce on the stovetop, I put the pork (rested with the dry rub for 36 hours or so) and the sauce straight into the crockpot and turned it to low for 6 hours.
I put it over cauliflower rice in the photo and the whole thing was enjoyed by all. Sheesh, these things are difficult to make look good, huh?
