This was a last-minute, I-almost-forgot kind of thing.
Luckily, my local farm stand had some nicely sized eggplants–about 6 inches long–though I did have to get some grocery store tomatoes.
In the end, these took quite a while to make and so I ended up having to eat some as a post-dinner snack last night and we will eat “leftovers” for dinner tonight. I thought these were fine, though the filling was a bit dry. I think these might last 1 dinner for the 3 of us, so serving 6 people seems ambitious. Shrug, they’re not something I’m going to repeat anytime soon, but (again) they’re fine.
