Chicken pot parmentier.
I made this one in early October and it was, in a word, fabulous. Warming, and ever so tasty, I went for the potato version instead of the chicken pot pie version with the biscuits (though I could foresee myself trying then biscuit topping!). I’ve made the regular ol’ hachis parmentier from Around My French Table, which is a favorite recipe in my house. This was a nice change that felt a bit lighter.
Making this recipe is what really caused my super late post. I just couldn’t get over all the resting. I’m not sure it helped anything, frankly, other than aiding in my procrastination. They were still good, but not worth the effort, in my opinion.
